    Hello and welcome! My name is Caroline, and I started The Broccoli Hut in March of 2008. Here’s a little background about me and how this blog came to be. I’ve always loved food. When I was a kid, I used to tell everyone that I dreamed of growing up to be a chef, and my favorite toy was a set of plastic fruits and vegetables. As I grew into a teenager, my relationship with food became a bit more troubled. I went from loving food to forcing myself to hate it in an effort to lose weight. I was diagnosed with anorexia nervosa at age 15. While recovering from an eating disorder was one of the most difficult things I’ve ever done, there was a silver lining–it ultimately led me to a career in nutrition. In the process of gaining weight, I decided to educate myself on what a “healthy diet” actually is and soon discovered that I was fascinated by the topic of nutrition. Fast forward three years, and I was a sophomore in college at Duke University. I had developed a passion for health and nutrition and decided to pursue a career as a dietitian. Duke doesn’t offer a nutrition major (and I didn’t want to transfer), so I bided my time until graduate school by starting this blog. The Broccoli Hut began as a way for me to engage in the blog world’s conversation about health and fitness, as well as a means of sharing my love of food. I graduate from Duke in 2010 with degrees in English and psychology. From there, I moved onto graduate school at Meredith College in Raleigh, NC to obtain a master’s degree in nutrition science. I will begin the University of Alabama at Birmingham (UAB) dietetic internship in the fall of 2013 so that I may (finally!) become a registered dietitian (RD). I have also been accepted to UAB’s doctoral program for nutrition sciences. So if all goes according to plan, I will be able to tack on “Ph.D, R.D.” at the end of my name in 3-4 years.
